“Specialty mackerel shabu” is a masterpiece that has been loved by everyone throughout the history of Mondo.

The soup stock, which is the lifeblood of mackerel shabu, is made with “Jidenshu,” an additive-free cooking sake made by Yoneda Sake Brewery in Matsue City.

Together with the flavorful mackerel flakes and Matsue City Hirano Soy Sauce’s extremely high quality sashimi soy sauce, “Kanro Soy Sauce,” it brings out the deep flavor and rich aroma.

We use the highest quality mackerel that can be eaten raw, carefully selected from all over the country, and undergo the “Tsumoto-style ultimate blood removal” process at our store to bring out the original freshness and flavor of the mackerel to its fullest.

Due to this time-consuming process, you can feel the amazing smoothness and rich flavor the moment you put it in your mouth.
